Chocolate Oatmeal with Dark Chocolate and Raspberry Chips

Leslie's Grandma gave me this morsels from Nestle Toll House 

I usually just eat them plain outside of a cookie, but our church library was having a grand re-opening time. I was asked to make a few treats. I love making treats, because I get to eat some of them too. :-) All in all, I made three cookie recipes. Each cookie was based on Grandma Carol's (a different grandma then the morsel provider) terrific blended oatmeal cookie. First, standard chocolate chip, second oatmeal scotchies (butterscotch) and, finally, this cookie displayed here.

I was not going to need to cook all 7 dozens worth of cookie dough. Here is my routine for freezing dough.

First, I measure out a pound of dough.

Next, I shape the dough into logs. This is the first time I've made chocolate cookies, so the dough doesn't look so, um, well, maybe I'm the only one who thinks it looks like something that shouldn't be on a kitchen counter. ;-)

The log is wrapped tight in waxed paper. Several logs are put together in a freezer bag and then frozen.

When I want to eat some, I cut off a slice and bake it as normal.

Sleepin' In Omelette

Here is my take on Sleepin' In Omelette by Pioneer Woman

I'm using the whole wheat bagels from Costco. The recipe calls for 6, but next time I'm using 4 MAX.

This is a neat layered dish. The egg mixture soaks into all the bread and bakes into an easy to serve and eat meal.

Pita Pizzas

This delicious meal idea came from our friends the Maxwells from Illinois when we visited summer 2007.

Here the adults are having fresh basil and chives. Elijah is having a pepperoni pizza while the girls each made a cheese pizza for themselves.

These are super simple to make. You build your pizza on pita bread using any spaghetti sauce with some white cheeses. I made a mix of mozzarella, jack and provolone. Add whatever toppings you want. We normally make a BBQ chicken pizza. Tonight, I chopped up a little left over chicken breast and mixed it with garlic and green onions. Bake at 350 degrees until the cheese is melted and golden brown. Let them cool a bit after coming out of the oven, but don't let them sit on the cookie for a long time because steam will build up and the crust will get soft.
