I made a few treats for Les's book show today. Below are tapas almonds. They are basically blanched almonds roasted and lightly salted.

Chocolate Chip Cookies with Helpers

Better watch out Gwen! I don't know if it is either this recipe or my helpers, but these cookies were as good as yours. They came out full bodied and great tasting!

Strawberry Sauce

Using a pound of strawberries that didn't look good enough to eat, I made this strawberry sauce recipe

Peach Jam

It was starts with peaches. Thanks again to Janean & her parents for the terrific peaches.

Final product. As of right now, I'm hoping more time in the refrigerator will help it set harder. Right now, it tastes good, but is very runny.

I think there are a lot of applications for this jam. I could put it on ice cream. I could stir it into some juices. I bet I could use it as a meat glaze too.

Peach Cobbler

Thanks to the parents of our best babysitter in the entire world, we have some fresh peaches. I tried this dessert for our Sunday school class.

I learned how to blanch during this process. It really saved a ton of time when removing the skin. The recipe uses 4 cups of peaches.

Neat idea for the upper crust. The "soft dough" was more like pancake batter. Get the fruit mixture hot and dropping the dough on it is like dumplings.

The crust has beautiful cracks in it thanks to the distinct droppings of batter.

Tips:

  • I added cinnamon to the crust
  • I used 1 C of brown sugar with the fruit
  • Butter all the way up your cooking dish. The fruit will bubble up.
  • I used a 2 QT rectangle baking dish. I'm glad I did since it is more surface space for the crust
  • Instead of mixing the fruit in the pan, I used a bowl. I didn't want ruin the butter coating.

Double Layer Brownie Cake

Birthday boy Elijah requested this "cake" for his party, for which I happily complied. Anytime I get to make brownies is a good time.

I used two packages of Ghirardelli double-chocolate brownie mixes from Costco. Each package made a 9-inch round pan of goodness. Layered inbetween the cakes is vanilla frosting.
