Granola Bar - err - Shrapnel

I have an extremely yummy recipe for granola, so I wanted to make it into bars. I took the binding components of a different granola bar recipe and applied it to my granola. Unfortunately, it did not want to come out of the pan. It was stuck. Instead of a nice bar as Alton Brown had it, mine was a solid brick that busted into bits. Good tasting bits, but bits nonetheless.

Granola Recipe

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
                        Dry Team
  6        Tablespoons  Brown Sugar
  1                Cup  Almonds -- slivered
     3/4           Cup  Sweetened Coconut Flakes
  1                Cup  Cashew
     3/4      Teaspoon  Kosher Salt
  3               Cups  Rolled Oats
                        Wet Works
     1/4           Cup  Canola Oil
  6        Tablespoons  Maple Syrup

In a large bowl, combine thoroughly the dry team

Combine wet works then mix into the dry.

Spread out on a cookie sheet with a lip into an even level.

Cook for 1 hour 15 minutes at 250 degrees. Stir every 15 minutes.

Cool for 30 minutes. Fold in any optional fruit or eat it.

Binder Recipe

1/2 C honey

1/4 C brown sugar

1 oz butter (1/4 stick)

2 t Vanilla extract

1/2 t kosher salt

Combine together in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.

Mix granola into the sauce and pour into a butter pan. Bake at 300 degrees for about 25 minutes. Let it cool completly before your try to remove it from the pan.

Desired Doughnuts

The kids have been asking me to make doughnuts. I really did not wait to do it, because it seemed like it would be a lot of work for little return. With that said, I was wrong. It was a lot of fun making these. It did take all day, but the kids helped a lot and I think they enjoyed working together. I am still very surprised at how many doughnuts this recipe made -- well over 2 dozen.

Rebekah is hand kneading and getting it ready for rolling out. I was shocked to see how much the dough rose. It was filled with huge air bubbles and was trying to escape from the bowl I had it in.

Here is the high-tech equipment we used to cut out the doughnuts: an old clean can and the lid for 2-liter bottle of pop.
