Chili Variation

I love my dad's chili. You'll find several postings on this site about this terrific dish. I was interested in trying something a little different. My chili (which is based on my dad's chili) uses ground turkey and a package of chili seasonings from the store. This recipe that follows uses stew beef and homemade chili (actual chile powder) seasonings.

I really liked the overall flavor. I'm not very impressed with the larger bites of the beef. Next time, I'll spin the beef in my food processor for a bit to chop it, but not to the ground level. The powder was the super star in this dish. There was some terrific flavor that I seared onto the meat.

Co-starring is my mini bell peppers that I roasted whole and skinned then pureed.

I thought it was a good idea to remove the seeds from my tomatoes to reduce extra water in the calzone.

Sausage, bell peppers, cheese (mozzarella, jack & provolone), tomatoes, and green onions.

I only built enough dough to fill 8 calzones, but I had enough filling for about 16 more. I rolled the filling up and stached it into the freezer for the next set of dough.

Coconut

Yup, that is a coconut. What can I say? We were in Henry's and Eljah asked if we could get a coconut. Thanks to Alton Brown's episode Down and Out in Paradise, I knew how to handle this nut.

Using my hand drill, I made two holes and poured out the milk. It wasn't as sweet as I thought it would be. Elijah spat it out when he tasted, but, at least, he tried it!

After some time in the oven, the nut cracked on its own. Elijah encouraged it to break in half, but swinging it on the ground with one good hit.

I actually thought the coconut tasted very good. The meat was tough, but very flavorful. I roasted the chucks after being broken up. Finally, Elijah and I ripped the meat off the inner shell and I shredded it & toasted the meat. It is very good. How do you like to use coconut?
