Fudge

I still don't have this down right. Timing is killer. I boiled too long and the end result was the fudge seizing up as I was pouring it out of the pan.

In a heavy saucepan or cast iron skillet, mix these ingredients

  • 2 oz unsweetened choco
  • 2 cups sugar
  • 1/2 t salt
  • 1/3 C Karo white corn syrup
  • 1/2 C milk
Bring to boil and about 236 degrees. Let it cool for a bit, then add ...
  • 1 t vanilla
  • 2 T butter
  • 1 C chopped nuts
Pour into a buttered pan. I think it would be better to pour into a parchment-paper lined dish.

Pocket Pies

What a neat little treat. It doesn't have to be sweet. Here I am filling the pies with apples. I have also filled them with cherries. You could fill them up with a stew or other savory dishes.

When it comes to cooking the pies, you have a couple different options: bake, fry or deep fry. Here I oven baked them and pan fried with a little butter. I liked the baked option. It was easier to cook and it was oily. I might try to pan fry them again someday.
